This Air Fryer Calamari Salad with Parmesan and Arugula is a tasty and nutritious way to enjoy fried calamari. Calamari rings are air fried until golden brown and crispy after being coated in a crispy parmesan breadcrumb mixture. This salad is the perfect balance of flavors and textures, served on top of a bed of fresh arugula dressed in a tangy lemon-dijon vinaigrette.

Instructions

  • Preheat the air fryer to 400°F.
  • Combine the flour, garlic powder, salt, and black pepper in a shallow bowl.
  • In a separate shallow bowl, whisk together the eggs.
  • In a third shallow bowl, combine panko breadcrumbs and parmesan cheese.
  • Calamari rings should be dipped in flour mixture, shaking off excess, then in egg mixture, and finally in breadcrumb mixture.
  • Place the coated calamari rings in a single layer in the air fryer basket and lightly spray with cooking spray.
  • 5-6 minutes in the air fryer, flipping halfway through, or until golden brown and crispy.
  • Meanwhile, make the dressing by whisking together olive oil, lemon juice, dijon mustard, minced garlic, salt, and pepper in a small bowl.
