This flavorful air fryer gnocchi with tomatoes and zucchini is a quick and easy weeknight dinner. In the air fryer, the gnocchi becomes crispy and golden, while the cherry tomatoes and zucchini roast to perfection. This dish, topped with grated Parmesan cheese and fresh basil, is sure to become a family favourite.

Instructions

  • Preheat the air fryer to 400 degrees Fahrenheit.
  • Toss the gnocchi with 1 tablespoon olive oil in a large mixing bowl until well coated.
  • In the air fryer basket, arrange the gnocchi in an even layer.
  • Air fry the gnocchi for 8-10 minutes, shaking the basket halfway through, until golden brown and crispy.
  • Meanwhile, toss the cherry tomatoes and zucchini in a large mixing bowl with 1 tablespoon olive oil, salt, and black pepper.
  • Remove the gnocchi from the air fryer basket and set it aside when done.
  • Place the tomato and zucchini mixture in the air fryer basket and cook for 5-7 minutes, shaking halfway through, or until the vegetables are tender and slightly charred.
